I took 21 for “AJ” ace jack in pontoon is 21. Also the dice, which add up to 21 if you sum all faces of a single die. Is the wolf supposed to be that famous “wolf 21”?

Ace + Jack is the perfect blackjack hand (21), confirmed by the 21 pips on the dice and the cannon suggesting a 21 gun salute.  The boar heads and wolf statue reference The Three Little Pigs, and the doors are made of straw, wood and stone for door 21.

Since no one has said it yet: The wolf and pig heads is to remind us of the story of the 3 little pigs. If you look closely at the doors, they’re made of similar materials to the pig houses. The correct door, 21, is made of stone; the material the wolf couldn’t blow down.
